Made from young green pine cones gathered in late spring, this traditional syrup has its roots in Alpine and Northern European folk kitchens, where it was prepared slowly and patiently as a way of preserving the fleeting abundance of the season. Pine cones were packed down, sweetened, and left to transform over time — not rushed, not cooked hard, but allowed to soften and deepen naturally.
As the weeks pass, the cones release their resinous character into the syrup, creating something unexpectedly rich and complex. The result is a deep, dark sweetness with notes of caramel, citrus, pine resin, and molasses — closer in feel to a forest-born treacle than a simple sugar syrup.
