Balsamic Mugolio Glaze
A taste of the forest, with a savoury twist
Wild-foraged pine cone & balsamic glaze
Our Mugolio Balsamic Glaze brings together three distinctive ingredients: our own homemade Mugolio, high-quality balsamic vinegar, and our wild garlic salt. The result is a rich, tangy, woodland-inspired glaze that combines the deep sweetness of pine cones with the mellow acidity of balsamic and the savoury, aromatic character of wild garlic.
At the heart of this glaze is Mugolio, a traditional Alpine-style pine cone syrup made from young, green pine cones. Slowly prepared to draw out their natural sweetness and distinctive woodland character, our homemade Mugolio develops a wonderfully complex flavour, with notes of caramel, molasses, pine, and a subtle citrus-like brightness.
We combine this unusual ingredient with high-quality balsamic vinegar, bringing a balanced acidity that cuts through the syrup's richness and creates the familiar sweet-and-tangy character of a good balsamic glaze. The vinegar adds depth and complexity, making this a natural companion to roasted ingredients, fresh salads, and savoury dishes.
To finish, we add our wild garlic salt, bringing a gentle savoury edge and the unmistakable flavour of wild garlic. It ties the sweetness and acidity together, creating a rounded, moreish glaze with a distinctly seasonal, foraged character.
The result is a versatile condiment that brings something a little different to the table. Rich enough to stand up to earthy flavours, yet tangy enough to brighten a dish, it makes a wonderful finishing touch for everyday cooking.
Drizzle it over roasted root vegetables, squash, or mushrooms just before serving, or whisk it into olive oil for a woodland-inspired salad dressing. It works beautifully with warm grain salads, grilled vegetables, and caramelised onions, and makes an interesting addition to a savoury cheeseboard.
This is a glaze for those who enjoy exploring unusual ingredients and finding new ways to bring wild flavours into the kitchen — a meeting of woodland sweetness, balsamic tang, and aromatic wild garlic.
